Cheesy Mexican Chicken


4 boneless, skinless chicken breasts
1 can cream of chicken soup
2 cups shredded cheddar cheese
½ cup milk
½ package taco seasoning (more if you like it spicy)
3 cups tortilla chips, slightly crushed

Put chicken in 9” x 13” baking dish. Mix soup, 1½ cups cheese, milk and seasoning together. Spoon over chicken. Top with chips. Cover and bake at 375° F for 35 minutes. Uncover. Top with remaining cheese and bake for 10 more minutes. Serve over rice.


Chicken Stir Fry


Broth:
1 cup chicken broth
1 tbl soy sauce
1 tbl corn starch
½ tsp ground ginger
¼ tsp crushed red pepper

4 cups cut up fresh veggies
2 cloves garlic, minced
¾ lb chicken, cut up
2 tbl oil (one for veggies—3 minutes—and one for chicken—4 minutes)

Stir together broth ingredients. Pour over combined veggies and chicken. Bring to boil and boil one minute.


No-Bake Cookies


2 cups sugar
2 tbl margarine
2 tbl cocoa
½ cup milk
¼ tsp salt
½ tsp vanilla
¾ cup peanut butter
2½ cups quick oats

Bring sugar, margarine, cocoa and milk to boil, stirring constantly. Stir in salt, vanilla, peanut butter and quick oats. Drop spoonfuls of the batter onto wax paper and let cool in rich, delightful lumps.

2 cups butter
2 cups sugar
2 cups brown sugar
4 eggs
2 tsp vanilla
4 cups flour
5 cups oat flour
1 tsp salt
2 tsp baking powder
2 tsp soda
4 oz. chocolate chips
1 8 oz. Hershey bar, grated or broken up

Bake at 375° F on greased cookie sheet for 6 minutes.


Oatmeal Cookies


1½ cup margarine
1½ cup sugar
1½ cup brown sugar
6 tbl milk
3 eggs
1½ tsp vanilla
4½ cups flour
1½-2 tsp cinnamon
1½ tsp baking soda
1-1½ tsp salt
4½-5 cups oatmeal

Cream margarine and sugars until fluffy. Add and mix the milk, eggs and vanilla. Add and mix flour, baking soda, cinnamon and salt. Add and mix the oatmeal. Bake at 350° F for 10-12 minutes.


Rich Brownies


2 cups sugar
2 cups flour
2/3 cup cocoa
2 tsp vanilla
4 tbl oil
4 eggs
1 cup butter

Mix. Pour into greased and floured cake pan and bake for 20 minutes at 350° F. Cake pan may also be dusted with cocoa powder instead of flour.


Nancy's Snickerdoodles


Batter:
½ cup butter
½ cup butter flavored Crisco
1 ½ cup sugar
2 eggs
2 ¾ cup flour
2 tsp cream or tartar
1 tsp baking soda
¼ tsp salt

Topping:
2 tbl sugar
2 tsp cinnamon
1 effusion of Nancy’s spit (optional; however, not using this ingredient may significantly diminish the magic of the final product)

Make 1” balls. Roll each in the cinnamon sugar topping. Bake at 400° F for 7-8 minutes.
